High-Protein Charred Corn Huancaína-Style Dip

A Peruvian-inspired party dip: deeply charred corn folded into a blended cottage cheese and Greek yogurt base with aji amarillo. 125 calories and 12g protein per serving.

Method

  1. 01Drive off the corn's moisture. Heat the skillet over medium-high heat. Add the thawed, dried corn without oil and cook for 2-3 minutes, stirring occasionally, until visible steam subsides.
  2. 02Char the corn. Add the measured olive oil and spread the corn into a single layer. Cook for another 7-9 minutes, stirring only every couple of minutes, until the kernels have plenty of dark blistered spots. Work in two batches if the pan is crowded. Transfer the corn to a plate and cool for 10 minutes.
  3. 03Blend the base. Add the cottage cheese, Greek yogurt, 56g of the aji amarillo paste, lime juice and zest, and garlic to the blender. Blend until completely smooth, scraping down the sides as needed. Taste, then blend in the remaining 14g aji paste. Add the salt only if the dip needs it; jarred aji paste can already be salty.
  4. 04Build the corn texture. Blend 150g of the cooled charred corn into the dairy base until mostly smooth. Fold the remaining corn in by hand, reserving a spoonful of the darkest kernels for the top.
  5. 05Chill and serve. Scrape the dip into a bowl, cover, and refrigerate for at least 30 minutes. Transfer to a shallow serving bowl and top only with the reserved charred corn. Serve cold with tortilla chips, sliced peppers, cucumbers, or spooned into tacos. These accompaniments are not included in the macros.

Notes from the kitchen

Portioning
This makes eight generous appetizer portions of about 160g each, with a full finished yield near 1,280-1,320g after the corn is charred. For exact servings, weigh your mixing bowl empty before you fill it, then weigh it full, subtract the empty weight, and divide the finished dip by eight. Tortilla chips, crisp vegetables, and taco portions are separate and are not included in the 125-calorie, 12g-protein estimate.
Ingredient notes
Aji amarillo brands vary dramatically in heat and salt, so the staged 56g-plus-14g addition keeps the batch adjustable while holding the 70g macro assumption. Dry corn matters: wet corn steams and dilutes the dip instead of building toasted flavor. Blend the cottage cheese completely before judging texture, since the dip thickens further during the chill. Do not swap aji amarillo for curry powder, turmeric, sriracha, or generic hot sauce, and do not puree all of the corn, since the visible char is the point.
Texture fixes
If the chilled dip is tighter than you want, blend in cold water 1 tsp at a time. If it seems loose, give it another 30 minutes in the refrigerator before changing anything else.
Storage and reheating
Cool the charred corn for 10 minutes before it touches the dairy base. Keep the finished dip covered and refrigerated at 40F or below for up to 4 days. Do not freeze. Freezing makes the yogurt and cottage-cheese base grainy and watery. For a party, transport it in an insulated cooler with cold packs and serve the bowl nested over ice when practical. Do not microwave. Return it to refrigeration within 2 hours, or within 1 hour if it has been above 90F.
Waste plan
The recipe uses full bags and containers: a full 16 oz bag of corn, a full 16 oz container of cottage cheese, two complete single-serve yogurt cups, and both limes. Refrigerate the remaining aji paste per its label, or freeze it in 1-tablespoon portions for grilled chicken, eggs, potatoes, or another batch.
